15-Minute Microwave Meat Loaf

I combined a few great-tasting meat loaf recipes to create this flavorful version, which my husband loves. And because it’s made in the microwave, the entree is ideal for busy nights


- 1 pound ground beef

- 1/2 cup breadcrumbs

- 1/4 cup ketchup

- 1 egg

- 1 teaspoon garlic powder

- 1 teaspoon onion powder

- 1 teaspoon dried parsley

- Salt and pepper to taste

- Olive oil (for greasing)



1. In a large bowl, mix together the ground beef, breadcrumbs, ketchup, egg, garlic powder, onion powder, dried parsley, salt, and pepper. Use your hands to thoroughly combine the ingredients.

2. Grease a microwave-safe dish with olive oil.

3. Shape the meat mixture into a loaf and place it in the greased dish.

4. Cover the dish with a microwave-safe lid or plastic wrap, leaving a small vent for steam to escape.

5. Microwave the meatloaf on high for 10 minutes.

6. Carefully remove the dish from the microwave and use a meat thermometer to check the internal temperature of the meatloaf. It should read at least 160°F (71°C).

7. If the meatloaf is not fully cooked, return it to the microwave for an additional 2-3 minutes.

8. Once fully cooked, let the meatloaf rest for 5 minutes before slicing and serving.

9. Optional: You can also brush some additional ketchup on top of the meatloaf before microwaving for a saucier finish.

10. Serve and enjoy your delicious 15-minute microwave meatloaf!
