Air Fryer Cauliflower Tacos

To get extra crispy "fried" cauliflower, you gotta use your air fryer. This recipe is basically the vegan version of our favorite fish tacos. The finishing touch? A quick and easy pickled slaw for a bite of freshness and a spicy mayo for a touch of heat.

Ingredients:

- 1 head of cauliflower

- 1 tablespoon olive oil

- 1 teaspoon chili powder

- 1 teaspoon garlic powder

- 1 teaspoon cumin

- Salt and pepper to taste

- 8 tortillas

- Toppings of your choice (such as shredded cheese, avocado, salsa, or cilantro)

Direction:

1. Preheat your air fryer to 400 degrees Fahrenheit.

 

2. Cut the cauliflower into small florets and place them in a bowl.

 

3. Drizzle the olive oil over the cauliflower and sprinkle the chili powder, garlic powder, cumin, salt, and pepper on top. Toss to coat the cauliflower evenly.

 

4. Place the seasoned cauliflower in the air fryer basket in a single layer. You may need to cook them in batches depending on the size of your air fryer.

 

5. Cook the cauliflower in the air fryer for 10-12 minutes, shaking the basket halfway through to ensure even cooking.

 

6. While the cauliflower is cooking, warm up the tortillas in a pan or in the microwave.

 

7. Once the cauliflower is cooked, assemble the tacos by placing a few spoonfuls of the cooked cauliflower onto each tortilla.

 

8. Top the tacos with your desired toppings, such as shredded cheese, avocado, salsa, or cilantro.

 

9. Serve the air fryer cauliflower tacos immediately and enjoy!
