Air Fryer Eggplant Parm

This hands-off eggplant Parm hits all the notes of our favorite fried (or baked!) versions, minus all the deep frying. Avoid sugar-y pasta sauces and choose one with the fewest ingredients, or make your own marinara sauce (it's easier than you'd think).

Ingredients:

- 1 large eggplant

- 1 cup bread crumbs

- 1 cup marinara sauce

- 1 cup grated mozzarella cheese

- 2 tablespoons olive oil

- 1 teaspoon garlic powder

- 1 teaspoon Italian seasoning

- Salt and pepper to taste

Direction:

1. Preheat your air fryer to 375°F.

 

2. Cut the eggplant into 1/4 inch thick slices and sprinkle with salt. Let the slices sit for 10 minutes to remove excess moisture.

 

3. In a shallow dish, mix together the bread crumbs, garlic powder, Italian seasoning, and a pinch of salt and pepper.

 

4. Dip each eggplant slice into the bread crumb mixture, coating both sides evenly.

 

5. Brush each slice with olive oil on both sides.

 

6. Place the coated eggplant slices in a single layer in the air fryer basket. Cook for 10-12 minutes, flipping halfway through, until the eggplant is tender and golden brown.

 

7. Once the eggplant is cooked, remove it from the air fryer and set aside.

 

8. In a small saucepan, heat up the marinara sauce and add a pinch of Italian seasoning.

 

9. Place a layer of eggplant slices in the bottom of a baking dish. Spoon some of the marinara sauce over the eggplant, followed by a sprinkle of mozzarella cheese.

 

10. Repeat this process until all the eggplant slices are used, making sure to end with a layer of mozzarella cheese on top.

 

11. Place the baking dish into the air fryer and cook for an additional 5-7 minutes, until the cheese is melted and bubbly.

 

12. Serve the eggplant parmesan hot, garnished with fresh herbs if desired. Enjoy your delicious and easy air fryer eggplant parmesan!
