Air Fryer Spinach & Artichoke Stuffed Chicken Breast
Spinach & artichoke dip is one of our all-time faves. We love it so much, we stuffed it inside boneless skinless chicken breasts for crazy-tasty results. Bonus: that creamy, cheesy filling keeps the super lean chicken moist and tender, even in the air fryer.
Direction:
1. Preheat your air fryer to 375°F.
2. In a mixing bowl, combine the thawed and drained spinach, chopped artichoke hearts, grated parmesan cheese, breadcrumbs, minced garlic, dried basil, salt, and black pepper. Mix well until all ingredients are evenly distributed.
3. Using a sharp knife, make a slit lengthwise on one side of each chicken breast, being careful not to cut all the way through. This will create a pocket for the stuffing.
4. Stuff each chicken breast with the spinach and artichoke mixture, pressing it in gently to fill the pocket.
5. Brush both sides of the stuffed chicken breasts with olive oil.
6. Lightly coat the air fryer basket with cooking spray to prevent sticking.
7. Place the stuffed chicken breasts in the air fryer basket, making sure they are not touching each other.
8. Air fry for 15-18 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F.
9. Optional: If you want a crispy and golden exterior, you can spray the chicken breasts with cooking spray halfway through cooking and flip them over.
10. Once done, remove the chicken breasts from the air fryer and let them cool for a few minutes before serving.
