1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
2. In a small bowl, mix together the Dijon mustard, apple cider vinegar, honey, dried thyme, garlic powder, salt, and black pepper until well combined.
3. In a separate large bowl, add the chicken tenders and pour the mustard mixture over them. Use tongs or your hands to toss the chicken tenders in the marinade, making sure they are evenly coated.
4. Let the chicken tenders marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
5. Once marinated, heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
6. Using tongs, transfer the chicken tenders from the marinade to the hot skillet, reserving the remaining marinade.
7. Cook the chicken tenders for about 3-4 minutes on each side, or until they are browned and cooked through.
8. Remove the chicken tenders from the skillet and place them on a baking sheet lined with parchment paper.
9. Pour the remaining marinade over the chicken tenders on the baking sheet.
10. Bake the chicken tenders in the oven for 10-12 minutes, or until they reach an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius).
11. Once cooked, remove the chicken tenders from the oven and let them cool for a few minutes before serving.
