Apricot Custard Pies

Quick and easy apricot and creamy vanilla custard pies in the Kmart Pie Maker using dried apricots, vanilla instant pudding mix and puff pastry.

Ingredients:

- 1 sheet puff pastry

- 1 cup fresh apricots, sliced

- 1 egg, beaten

- 1/4 cup granulated sugar

- 1/4 teaspoon ground cinnamon

- Olive oil for greasing

Direction:

1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).

2. Grease a muffin tin with olive oil.

3. Cut the puff pastry sheet into 6 equal squares.

4. Gently press each square into one of the muffin tin cups, making sure to create a small lip around the edges.

5. In a small bowl, mix together the sliced apricots, beaten egg, granulated sugar, and ground cinnamon.

6. Divide the apricot mixture evenly among the 6 puff pastry cups.

7. Bake the pies for 20-25 minutes, or until the pastry is golden brown and the filling is set.

8. Let the pies cool for a few minutes before carefully removing them from the muffin tin.

9. Serve warm or at room temperature. Enjoy your delicious and simple Apricot Custard Pies!
