Baked Orange Chicken

This baked version is just as delicious and savory-sweet as the original orange chicken without the added effort or calories. Serve alongside brown rice and some delicious broccoli or bok choy for a fantastic healthy weeknight meal.

Ingredients:

- 4 chicken breasts

- 1 orange

- 2 tablespoons olive oil

- Salt

- Pepper

- Garlic powder

- Onion powder

- Dried thyme

- Dried oregano

- Dried parsley

Direction:

1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).

 

2. In a small bowl, mix together 2 tablespoons of olive oil with 1 teaspoon each of salt, pepper, garlic powder, onion powder, dried thyme, oregano, and parsley. This will create a flavorful marinade for the chicken.

 

3. Take the chicken breasts and place them in a large bowl. Pour the olive oil and spice mixture over the chicken, making sure to coat each piece evenly.

 

4. Cut the orange into thin slices and place them on top of the chicken breasts. This will add a touch of sweetness and citrus flavor to the dish.

 

5. Transfer the chicken breasts and orange slices to a baking dish. Make sure they are arranged in a single layer.

 

6. Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and reaches an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius).

 

7. Once done, remove the baking dish from the oven and let it rest for 5 minutes before serving. This will allow the juices to redistribute and keep the chicken moist.

 

8. Serve the baked orange chicken with your favorite side dish and enjoy! The orange slices can be eaten alongside the chicken or squeezed over it for extra flavor.
