Baked Salmon

We have no shortage of creative salmon recipes, but there’s a reason this simple version is one of our most popular recipes. Whether you’re looking for the easiest way to feed a crowd or a simple, hands-off weeknight dinner, this is a recipe you’ll want to keep up your sleeve.

Ingredients:

- 4 salmon fillets

- 1 red bell pepper

- 1 yellow bell pepper

- 1 zucchini

- 1 onion

- Olive oil

- Salt

- Pepper

- Garlic powder

- Dried thyme

- Dried oregano

Direction:

1. Preheat your oven to 375°F (190°C).

 

2. Line a baking sheet with aluminum foil and lightly coat it with olive oil.

 

3. Rinse the salmon fillets and pat them dry with paper towels. Place them on the prepared baking sheet.

 

4. Slice the red and yellow bell peppers into thin strips, and cut the zucchini into half-moons. Roughly chop the onion into wedges.

 

5. Place the vegetables on the baking sheet surrounding the salmon fillets.

 

6. Drizzle olive oil over the salmon and vegetables, then sprinkle with salt, pepper, garlic powder, dried thyme, and dried oregano.

 

7. Gently toss the vegetables to evenly coat them with the seasoning and oil.

 

8. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

 

9. Serve the baked salmon and vegetables hot, garnished with fresh herbs or a squeeze of lemon juice if desired. Enjoy!
