Bean Burritos

I always have the ingredients for this cheesy burrito recipe on hand. Cooking the rice and shredding the cheese the night before saves precious minutes at dinnertime.

Ingredients:

- 1 can of black beans

- 1 onion

- 2 cloves of garlic

- 1 tomato

- 1 avocado

- 1 lime

- 4 tortillas

- Olive oil

- Salt

- Pepper

- Cumin

- Chili powder

- Garlic powder

Direction:

Instructions:

1. Begin by preparing all the ingredients for the burritos. Drain and rinse the can of black beans and set aside. Finely chop the onion and garlic cloves. Dice the tomato and avocado. Cut the lime into wedges.

2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic and cook for 2-3 minutes until softened.

3. Add the drained black beans to the skillet and stir to combine with the onion and garlic. Season with 1 teaspoon of cumin, 1 teaspoon of chili powder, and 1/2 teaspoon of garlic powder. Mix well and let the beans cook for another 2-3 minutes.

4.Take a tortilla and place it on a flat surface. Spoon some of the bean mixture onto the center of the tortilla. Add a few pieces of diced tomato and avocado on top. Squeeze some lime juice over the filling and season with a pinch of salt and pepper.

5. Fold in the sides of the tortilla and then roll it up tightly, starting from the bottom. Repeat with the remaining tortillas and filling.

6. In the same skillet, heat 1 tablespoon of olive oil over medium heat. Place the burritos seam side down and cook for 2-3 minutes on each side until golden brown and crispy.

7. Serve the bean burritos hot with extra avocado, tomato, and lime wedges on the side for garnish. You can also add any other toppings of your choice such as shredded cheese, sour cream, or salsa. Enjoy your delicious and easy bean burritos!
