Beef & Spinach Lo Mein

If you like a good stir-fry, this beef and spinach lo mein will definitely satisfy. I discovered the recipe at an international luncheon, and it's now a favorite go-to meal.

Ingredients:

- 1 lb beef, thinly sliced

- 8 oz lo mein noodles

- 1 cup fresh spinach

- 2 tbsp olive oil

- 1 tsp salt

- 1 tsp black pepper

- 1 tsp garlic powder

- 1 tsp onion powder

- 1 tsp sesame oil (optional)

Direction:

Instructions:

1. Start by boiling a pot of water and cooking the lo mein noodles according to package instructions. Drain and set aside.

2. In a large pan or wok, heat olive oil over medium-high heat. Add the thinly sliced beef and cook for about 5-6 minutes, or until browned and cooked through.

3. Add the spinach to the pan with the beef and cook for an additional 2-3 minutes, until the spinach is wilted.

4. Add the cooked lo mein noodles to the pan with the beef and spinach. If desired, you can also add a tsp of sesame oil for added flavor.

5. Season the mixture with salt, black pepper, garlic powder, and onion powder. Toss everything together until well combined and heated through.

6. Serve the beef and spinach lo mein hot and enjoy! You can also add additional seasonings or garnishes of your choice, such as red pepper flakes or chopped green onions. Enjoy your simple and delicious lo mein dish!
