This one-platter-serves-all beetroot hummus will be a big hit, and doesn’t require any cooking
Ingredients:
- 2 large beets
- 1 can of chickpeas, drained and rinsed
- 2 cloves of garlic, minced
- 1/4 cup of tahini
- 2 tablespoons of lemon juice
- 2 tablespoons of olive oil
- Salt and pepper, to taste
- 1 teaspoon of cumin
- 1 teaspoon of smoked paprika
- 1/4 cup of water
- Pita bread or vegetables for dipping
Direction:
1. Start by preheating your oven to 375°F (190°C).
2. Wash and peel the beets, then cut them into small cubes.
3. Place the beet cubes on a baking sheet and drizzle with olive oil, salt, and pepper.
4. Roast the beets in the oven for 25-30 minutes, or until they are tender.
5. In a food processor, combine the roasted beets, chickpeas, minced garlic, tahini, lemon juice, olive oil, cumin, smoked paprika, and water.
6. Blend until all the ingredients are well combined and the hummus is smooth and creamy.
7. Taste and adjust the seasoning, adding more salt and pepper if needed.
8. Transfer the beetroot hummus to a serving bowl or platter.
9. Cut pita bread into triangles and arrange them around the hummus. Alternatively, you can also use a variety of vegetables such as carrots, celery, and bell peppers for dipping.
10. Drizzle a little bit of olive oil on top of the hummus and sprinkle some extra cumin and smoked paprika for garnish.
11. Serve and enjoy your delicious and colorful beetroot hummus party platter!
