Buffalo Shrimp Lettuce Wraps

While Buffalo wings are a game day MUST, they don’t always fit into our day to day meal plans. Instead we’ve taken the buttery, spicy flavor combination and turned it into these lettuce wraps perfect for an anytime healthy, light dinner.

Ingredients:

-1 lb raw shrimp, peeled and deveined

-1 head of lettuce

-1/4 cup buffalo sauce

-2 tbsp olive oil

-1 tsp garlic powder

-1 tsp onion powder

-1 tsp paprika

-1 tsp cayenne pepper

-Salt and pepper to taste

Direction:

1. Preheat a large skillet over medium heat and add 2 tablespoons of olive oil.

 

2. Season the shrimp with garlic powder, onion powder, paprika, cayenne pepper, and salt and pepper. Toss the shrimp to evenly coat them in the seasoning.

 

3. Once the skillet is hot, add the seasoned shrimp and cook for 2-3 minutes on each side until they turn pink and are fully cooked.

 

4. While the shrimp is cooking, wash and dry the lettuce leaves and set aside.

 

5. Once the shrimp is fully cooked, remove them from the skillet and place them in a medium-sized bowl.

 

6. Pour 1/4 cup of buffalo sauce over the cooked shrimp and toss to coat them in the sauce.

 

7. Take a lettuce leaf and place a few pieces of the buffalo shrimp in the center. Roll the leaf tightly around the shrimp filling, tucking in the sides as you go. Repeat with the remaining lettuce leaves and shrimp.

 

8. Serve the buffalo shrimp lettuce wraps immediately and enjoy! These wraps can also be served with additional buffalo sauce on the side for dipping.
