We're always looking for new ways to enjoy classic recipes, and this mac and cheese with andouille sausage and Cajun seasoning is a keeper.
Ingredients:
- 1 pound macaroni noodles
- 2 tablespoons olive oil
- 2 tablespoons Cajun seasoning
- 1 tablespoon dried thyme
- 1 tablespoon dried oregano
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 2 tablespoons flour
- 2 cups milk
- 2 cups shredded cheddar cheese
- 1 cup grated parmesan cheese
- Salt and pepper to taste
Direction:
1. Cook the macaroni noodles according to package instructions in a large pot of salted water. Drain and set aside.
2. In the same pot, heat 2 tablespoons of olive oil over medium heat. Add 2 tablespoons of Cajun seasoning, 1 tablespoon of dried thyme, 1 tablespoon of dried oregano, 1 tablespoon of garlic powder, and 1 tablespoon of onion powder. Stir to combine and cook for 1-2 minutes until fragrant.
3. Add 2 tablespoons of flour to the pot and stir until well combined with the seasoning mixture.
4. Slowly pour in 2 cups of milk, whisking constantly to prevent lumps from forming. Bring the mixture to a simmer and let it cook for about 5 minutes until it thickens.
5. Add 2 cups of shredded cheddar cheese to the pot and stir until melted and well combined. Then, add 1 cup of grated parmesan cheese and stir until melted.
6. Season the cheese sauce with salt and pepper to taste.
7. Add the cooked macaroni noodles to the cheese sauce and stir until all the noodles are coated in the sauce.
8. Serve the Cajun mac and cheese hot and enjoy!
Optional: For extra flavor and texture, you can top the mac and cheese with additional shredded cheese and breadcrumbs and bake it in the oven for 10-15 minutes until the top is golden and crispy.
