Cajun Shrimp Foil Packets with Red Potatoes and Zucchini

The best part about foil packet dinners? No cleanup!


- 1 lb shrimp, peeled and deveined

- 4 red potatoes, diced

- 2 zucchini, sliced

- 4 cloves garlic, minced

- 4 tablespoons olive oil

- 2 teaspoons Cajun seasoning

- 1 teaspoon dried thyme

- 1 teaspoon dried oregano

- Salt and pepper to taste


1. Preheat your oven to 375°F (190°C).

2. In a small bowl, mix together 4 tablespoons of olive oil, 2 teaspoons of Cajun seasoning, 1 teaspoon of dried thyme, and 1 teaspoon of dried oregano.

3. Take 4 sheets of aluminum foil and lay them out on a flat surface.

4. Place the diced red potatoes in the center of each foil sheet, dividing them evenly.

5. Place the sliced zucchini on top of the potatoes.

6. In a separate bowl, toss the peeled and deveined shrimp with the minced garlic.

7. Divide the shrimp evenly among the foil packets, placing them on top of the zucchini.

8. Drizzle the olive oil and seasoning mixture over the shrimp and vegetables in each packet.

9. Season with salt and pepper to taste.

10. Fold the foil over the ingredients to create a sealed packet.

11. Place the foil packets on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the shrimp are fully cooked and the vegetables are tender.

12. Carefully open the foil packets and transfer the contents to a serving dish.
