cajun spiced chicken gnocchi

Cajun-Spiced Chicken & Gnocchi

Let the good times roll because this chicken and pasta skillet will take you straight to Louisiana. Just like our other gnocchi skillet dinners, this one is absolutely craveable; plus, it brings all the flavors we associate with New Orleans into your kitchen, just in time for Mardi Gras.

Ingredients:

- 1 lb boneless, skinless chicken breasts

- 1 package (16 oz) potato gnocchi

- 2 tablespoons olive oil

- 1 tablespoon Cajun seasoning

- 1 teaspoon dried thyme

- 1 teaspoon paprika

- Salt and pepper, to taste

Direction:

1. Begin by preparing the chicken. Preheat your oven to 375°F (190°C). Season both sides of the chicken breasts with salt, pepper, and Cajun seasoning.

 

2. Heat a tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken breasts and cook for 5-6 minutes on each side, or until fully cooked and no longer pink in the middle.

 

3. While the chicken is cooking, bring a pot of salted water to a boil. Add the gnocchi and cook according to package instructions. Once cooked, drain and set aside.

 

4. In the same skillet used for the chicken, add another tablespoon of olive oil and heat over medium heat. Add the cooked gnocchi, dried thyme, paprika, and a pinch of salt and pepper. Cook for 3-4 minutes, stirring occasionally, until the gnocchi is slightly crispy.

 

5. Once the chicken is fully cooked, remove it from the skillet and let it rest for a few minutes before slicing it into thin strips.

 

6. Serve the Cajun-spiced chicken on top of the gnocchi and enjoy! You can also sprinkle some extra Cajun seasoning on top for an extra kick of flavor. This dish can be served as is or with a side of vegetables for a well-balanced meal. Enjoy!
