Instructions:
1. Preheat your oven to 350 degrees Fahrenheit (180 degrees Celsius). Grease a baking sheet with olive oil and set it aside.
2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
3. Add in the honey, tahini paste, and vanilla extract. Mix well until fully combined.
4. In a separate bowl, sift together the all-purpose flour, baking powder, and salt.
5. Slowly add the flour mixture into the wet ingredients, stirring until a smooth dough forms.
6. Using a spoon or cookie scoop, form small balls of dough and place them on the greased baking sheet, leaving about 2 inches of space in between each cookie.
7. Using a fork, gently press down on each cookie to create a criss-cross pattern on top. Sprinkle a pinch of sea salt on top of each cookie.
8. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
9. Once done, remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
10. Serve and enjoy your delicious caramelised honey & tahini cookies! These are perfect for snacking on with a cup of tea or coffee. Store any leftovers in an airtight container for up to 3 days.
