Cashew Chicken and Broccoli

This delicious cashew chicken and broccoli stir-fry is tossed with a zesty stir-fry sauce and can be ready to go in just 30 minutes!


- 1 pound chicken breast, cut into bite-sized pieces

- 1 head of broccoli, cut into small florets

- 1/2 cup cashews

- 2 tablespoons olive oil

- Salt and pepper

- 1 teaspoon garlic powder

- 1 teaspoon onion powder

- 1 teaspoon ginger powder

- 1/4 cup soy sauce

- 1 tablespoon cornstarch

- 1/4 cup water


1. In a bowl, mix together the garlic powder, onion powder, and ginger powder. Add salt and pepper to taste.

2. Coat the chicken pieces with the seasoning mixture.

3. In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken and cook until browned and fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.

4. In the same skillet, add the remaining olive oil and broccoli. Stir fry for 3-4 minutes until the broccoli is tender.

5. While the broccoli is cooking, mix together the soy sauce, cornstarch, and water in a small bowl.

6. Once the broccoli is tender, add the chicken back into the skillet. Pour the soy sauce mixture over the chicken and broccoli and stir to evenly coat everything.

7. Let the sauce thicken for about 2 minutes, stirring occasionally.

8. Add the cashews to the skillet and stir to combine.

9. Serve the cashew chicken and broccoli stir fry over rice or noodles. Enjoy!
