Charred spring onion, chilli & feta flatbreads

Make vibrant spring onions the star of the show, scattered over creamy, tangy feta and soft flatbreads for a simple yet stunning lunch.

Ingredients:

- 4 flatbreads

- 4 spring onions

- 1 red chilli

- 1/4 cup crumbled feta cheese

- Olive oil

- Salt

- Black pepper

- Dried oregano

- Garlic powder

Direction:

1. Preheat your grill to medium-high heat.

2. Rinse and dry the spring onions and red chilli. Cut the spring onions in half lengthwise and slice the red chilli into thin rounds.

3. In a small bowl, mix together 2 tablespoons of olive oil, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, 1 teaspoon of dried oregano, and 1/2 teaspoon of garlic powder. Set aside.

4. Brush the flatbreads with the seasoned olive oil on both sides.

5. Place the flatbreads on the grill and cook for 2-3 minutes on each side, until lightly charred.

6. While the flatbreads are cooking, place the spring onions and red chilli on the grill and cook for 1-2 minutes on each side until they are slightly charred.

7. Once the flatbreads are done, remove them from the grill and place them on a cutting board.

8. Cut the charred spring onions into small pieces and sprinkle them over the flatbreads.

9. Next, sprinkle the crumbled feta cheese and red chilli on top of the flatbreads.

10. Drizzle the remaining seasoned olive oil over the flatbreads.

11. Place the flatbreads back on the grill for an additional minute, until the feta cheese starts to melt.

12. Remove the flatbreads from the grill and let them cool for a minute.

13. Cut the flatbreads into smaller pieces and serve immediately.
