These quick, easy and delicious balls are packed with mashed potato, cheddar cheese, tuna and corn. They're perfect for a snack, quick budget dinner or lunchbox treat.
Ingredients:
- 1 can of corn, drained
- 1 can of tuna, drained
- 1 cup of bread crumbs
- 1 egg
- 1/4 cup of grated cheese
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Direction:
1. In a mixing bowl, combine the drained corn, tuna, bread crumbs, egg, grated cheese, salt, pepper, garlic powder, and onion powder.
2. Mix all the ingredients together until well combined.
3. Heat olive oil in a frying pan over medium heat.
4. Take a small portion of the mixture and shape it into a ball using your hands.
5. Gently place the ball into the hot frying pan and flatten it slightly with a spatula.
6. Cook the ball for 2-3 minutes on each side, or until it is golden brown and crispy.
7. Once cooked, remove the ball from the pan and place it on a paper towel to drain any excess oil.
8. Repeat the process with the remaining mixture, making sure to add more olive oil to the pan as needed.
9. Serve the cheesy corn and tuna balls hot as an appetizer or snack. You can also serve them with a side of your favorite dipping sauce.
