Chef John's Remoulade Sauce

To make this simple remoulade sauce, combine mayonnaise, Dijon mustard, fresh dill, pickles, minced garlic, capers, lemon juice, and a dash of cayenne. This version has some body to it. It's easy and so much better than store-bought versions. Try it with crab cakes or pretty much any grilled, broiled, or pan-seared fish.

Ingredients:

- 1 cup mayonnaise

- 1/4 cup Dijon mustard

- 1 tablespoon chopped capers

- 1 tablespoon chopped dill pickles

- 1 tablespoon chopped fresh parsley

- 1 tablespoon chopped green onion

- 1 tablespoon minced garlic

- 1 tablespoon apple cider vinegar

- 1 tablespoon olive oil

- 1 teaspoon paprika

- 1 teaspoon cayenne pepper

- Salt and pepper to taste

Direction:

1. In a medium bowl, combine mayonnaise, Dijon mustard, chopped capers, chopped dill pickles, chopped fresh parsley, chopped green onion, minced garlic, apple cider vinegar, olive oil, paprika, cayenne pepper, and salt and pepper.

 

2. Stir all the ingredients together until well combined and the sauce is smooth.

 

3. Taste the sauce and adjust the seasoning according to your taste preferences. You can add more salt, pepper, or spices if desired.

 

4. Once the sauce is ready, transfer it to a jar or airtight container and refrigerate for at least 30 minutes to allow the flavors to develop.

 

5. Serve the remoulade sauce as a dip for fried foods like shrimp, fish, or chicken. It also works well as a spread on sandwiches or wraps.
