Chicken à la King

Chicken à la king (lit. king-style chicken) is a savory dish made with diced chicken meat, cream sauce, vegetables, and sherry mushrooms, served over either rice, noodles, or buttered toast or bread. The recipe was first mentioned in the New York Times in 1893, but as far as its origin, there are several claims.

Ingredients:

- 1 lb chicken breast, cut into bite-sized pieces

- 1 onion, diced

- 1 bell pepper, diced

- 1 cup mushrooms, sliced

- 1 can condensed cream of mushroom soup

- 1 cup chicken broth

- 1/2 cup milk

- 2 tbsp olive oil

- 1 tsp garlic powder

- 1 tsp dried thyme

- Salt and pepper, to taste

- 1/4 cup all-purpose flour

- Cooked rice or pasta, for serving

Direction:

1. In a large skillet, heat olive oil over medium-high heat. Add in the chicken breast pieces and cook until they are no longer pink, about 5-7 minutes. Remove the chicken from the skillet and set aside.

2. In the same skillet, add the diced onion, bell pepper, and sliced mushrooms. Cook until they are softened, about 5 minutes.

3. Sprinkle in the flour, garlic powder, and dried thyme. Stir and cook for about a minute, until the flour is fully incorporated.

4. Slowly pour in the chicken broth, stirring constantly to prevent lumps from forming. Add in the condensed cream of mushroom soup and milk. Stir until everything is well combined.

5. Bring the mixture to a simmer and let it cook for about 5 minutes, until it thickens.

6. Add the cooked chicken back into the skillet and stir to combine. Let it cook for an additional 5 minutes, until the chicken is heated through.

7. Season with salt and pepper, to taste.

8. Serve the chicken à la king over cooked rice or pasta, garnished with some fresh parsley or chopped green onions, if desired. Enjoy!
