Chicken and Dumplings

Chicken and dumplings is an American dish consisting of water-cooked chicken and dumplings made from flour, shortening, and liquid. The dumplings are usually cooked in the leftover chicken broth after the meat has been cooked. The dish was originally prepared during the Great Depression as a way to stretch a small amount of meat that would feed many people.


- 1 lb chicken breasts, cut into bite-sized pieces

- 2 cups chicken broth

- 1 cup all-purpose flour

- 1/2 cup milk

- 2 tablespoons olive oil

- 1 teaspoon salt

- 1/2 teaspoon black pepper

- 1 teaspoon dried thyme

- 1 teaspoon dried parsley

- 1 teaspoon garlic powder

- 1 teaspoon onion powder

- 2 cups frozen mixed vegetables

- 1 cup water

- Additional salt and pepper to taste


1. In a large pot, heat olive oil over medium heat. Add chicken pieces and cook until browned on all sides, about 5 minutes.

2. Pour in chicken broth and bring to a boil. Reduce heat and let simmer for 10 minutes.

3. In a separate bowl, mix together flour, milk, 1 teaspoon salt, 1/2 teaspoon black pepper, dried thyme, dried parsley, garlic powder, and onion powder. This will create a thick batter.

4. Drop spoonfuls of the batter into the pot of chicken broth, making sure to evenly distribute them. Cover the pot and let simmer for 10 minutes.

5. Meanwhile, in a small pot, bring 1 cup of water to a boil. Add the frozen mixed vegetables and cook for about 5 minutes, until heated through.

6. Once the vegetables are cooked, add them to the pot of chicken and dumplings. Stir gently to combine.

7. Let the chicken and dumplings simmer for an additional 5-10 minutes, or until the dumplings are cooked through and the sauce has thickened.

8. Taste and add additional salt and pepper to taste.

9. Serve hot and enjoy your homemade chicken and dumplings! You can also add a sprinkle of dried parsley on top for a pop of color and flavor.
