Chicken and Waffles

Fried chicken and waffles is an unlikely, but much loved pairing of sweet and salty flavors and soft and crunchy textures. The dish is thought to have originated with the African Americans in the South who rarely had a chance to eat chicken and waffles, so it was a meal that was eaten at special occasions on African American dining tables.

Ingredients:

- 1 pound chicken breast

- 1 cup all-purpose flour

- 1 tablespoon baking powder

- 1 tablespoon sugar

- 1 teaspoon salt

- 1 egg

- 1 cup milk

- 1/4 cup olive oil

- 1 tablespoon seasoning (such as garlic powder, onion powder, or your choice)

- Dried spices (such as paprika, cayenne pepper, or your choice)

Direction:

1. Begin by preheating your waffle maker to the desired setting.

2. In a large bowl, mix together the all-purpose flour, baking powder, sugar, salt, and your chosen dried spices. Set aside.

3. In a separate bowl, beat the egg and then add in the milk and olive oil. Mix everything together until well combined.

4. Cut the chicken breast into small, bite-sized pieces and set aside.

5. Dip each piece of chicken into the wet batter mixture and then coat it in the dry mixture. Make sure each piece is well coated.

6. Place the coated chicken pieces onto a lined baking sheet and bake in the oven at 375°F for 15-20 minutes, or until chicken is cooked through and golden brown.

7. While the chicken is cooking, prepare your waffles according to your waffle maker instructions. You can add in some extra seasoning or dried spices to the waffle batter for added flavor.

8. Once the chicken is fully cooked, remove it from the oven and let it cool for a few minutes.

9. Assemble your chicken and waffles by placing a waffle on a plate and topping it with the cooked chicken pieces. Drizzle some olive oil and add a sprinkle of your chosen seasoning on top for extra flavor.

10. Serve hot and enjoy your delicious chicken and waffles! You can also pair it with some maple syrup or honey for a sweet and savory combination.
