Chicken Broccoli Stir Fry (extra saucy!)

This is a quick and easy recipe for a Chicken Broccoli Stir Fry that has just about the least number of ingredients you can get away with but still deliver a dish that stacks up to the best Chinese takeout! Plenty of savoury homemade stir fry sauce – because broccoli florets are a sponge for sauce plus I need extra for rice soaking. It’s essential!


- 1 lb boneless, skinless chicken breasts, cubed

- 2 cups broccoli florets

- 3 tbsp olive oil

- 1 tsp garlic powder

- 1 tsp onion powder

- 1 tsp dried oregano

- 1 tsp dried basil

- 1 tsp red pepper flakes (optional)

- Salt and pepper, to taste

- 1/2 cup soy sauce

- 1/4 cup honey

- 1 tbsp cornstarch

- 1/4 cup water

- Cooked rice, for serving


1. In a small bowl, mix together the soy sauce, honey, cornstarch, and water. Set aside.


2. In a large skillet or wok, heat 2 tbsp of olive oil over medium-high heat.


3. Add the cubed chicken to the skillet and season with garlic powder, onion powder, dried oregano, dried basil, red pepper flakes (if using), salt, and pepper. Cook until the chicken is browned and cooked through, about 5 minutes.


4. Remove the chicken from the skillet and set aside.


5. In the same skillet, add 1 tbsp of olive oil and the broccoli florets. Cook for 3-4 minutes, until the broccoli is slightly tender.


6. Add the cooked chicken back to the skillet with the broccoli.


7. Give the soy sauce mixture a quick stir and then pour it over the chicken and broccoli. Stir everything together to evenly coat the chicken and broccoli.


8. Cook for an additional 2-3 minutes, until the sauce thickens and coats the chicken and broccoli.


9. Serve the chicken broccoli stir fry over cooked rice, garnished with additional red pepper flakes and chopped green onions, if desired.
