Chicken Divan

Chicken divan is a rich casserole made with chicken pieces, almonds, broccoli, and Mornay or hollandaise sauce. In the 1950s, it was the signature dish of a New York restaurant called the Divan Parisienne, hence the name.

Ingredients:

- 1 lb chicken breast, cut into small cubes

- Olive oil

- Salt and pepper

- 1 head of broccoli, cut into florets

- 1 can cream of chicken soup

- 1/2 cup mayonnaise

- 1/2 cup sour cream

- 1/2 cup shredded cheddar cheese

- 1/4 cup breadcrumbs

- 1 tsp garlic powder

- 1 tsp onion powder

- 1 tsp dried thyme

- 1 tsp dried oregano

Direction:

1. Preheat your oven to 375°F (190°C).

2. In a large skillet, heat 1 tablespoon of olive oil over medium heat.

3. Season the cubed chicken breast with salt and pepper, then add it to the skillet. Cook for about 5-6 minutes, until the chicken is fully cooked and slightly browned. Remove from heat and set aside.

4. In the same skillet, add another tablespoon of olive oil and add the broccoli florets. Season with salt and pepper and cook for about 3-4 minutes, until the broccoli is slightly tender.

5. In a small mixing bowl, combine the cream of chicken soup, mayonnaise, sour cream, garlic powder, onion powder, dried thyme, and dried oregano. Mix well until fully combined.

6. In a separate baking dish, layer the cooked chicken and broccoli on the bottom.

7. Pour the cream of chicken mixture over the chicken and broccoli, spreading it evenly.

8. Sprinkle the shredded cheddar cheese on top of the mixture, followed by the bread crumbs.

9. Drizzle a little bit of olive oil over the top of the bread crumbs to help them brown in the oven.

10. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.

11. Let the dish cool for a few minutes before serving. Enjoy your delicious Chicken Divan!
