Chicken Fajita Quesadillas

Chicken fajita quesadillas are a flavorful and filling meal that can be made in under 30 minutes. They are filled with chicken, peppers, onions, and cheese, and can be served with salsa, sour cream, or guacamole.

Ingredients:

- 1 pound chicken breasts, thinly sliced

- 1 bell pepper, thinly sliced

- 1 onion, thinly sliced

- 1 cup shredded cheese

- 4 large tortillas

- 2 tablespoons olive oil

- 1 teaspoon chili powder

- 1 teaspoon cumin

- 1 teaspoon garlic powder

- Salt and pepper to taste

Direction:

1. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.

2. Season the chicken breasts with chili powder, cumin, garlic powder, salt and pepper.

3. Add the seasoned chicken to the skillet and cook for 5-6 minutes, until fully cooked and slightly browned. Remove chicken from skillet and set aside.

4. In the same skillet, add another tablespoon of olive oil and sauté the bell pepper and onion for 3-4 minutes, until tender.

5. Preheat a separate skillet over medium heat.

6. Place one tortilla in the skillet, and top with a layer of shredded cheese.

7. Add a layer of the cooked chicken, followed by the sautéed bell pepper and onion.

8. Top with another layer of shredded cheese and place a second tortilla on top.

9. Cook for 2-3 minutes, until the cheese starts to melt. Use a spatula to carefully flip the quesadilla and cook for an additional 2-3 minutes on the other side.

10. Once the cheese is fully melted and the tortilla is crispy, remove the quesadilla from the skillet and set it on a cutting board.

11. Repeat steps 6-10 with the remaining ingredients to make 3 more quesadillas.

12. Slice each quesadilla into 4 wedges and serve hot.
