Enjoy a relaxed weekend supper with this comforting one-pot chicken and rice dish. Top with sesame seeds, spring onions, chilli oil and crispy onions
Ingredients:
- 1 pound chicken breast, diced
- 2 cups cooked white rice
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 tablespoon minced ginger
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- Salt and pepper, to taste
- Green onions for garnish
Direction:
1. In a large frying pan or wok, heat the olive oil over medium-high heat.
2. Add the minced garlic and ginger and cook for 1-2 minutes until fragrant.
3. Add the diced chicken breast to the pan and cook until golden brown and cooked through, about 5-7 minutes.
4. Season with salt and pepper to taste.
5. Push the chicken to one side of the pan and add the cooked white rice to the other side.
6. Drizzle the soy sauce and sesame oil over the rice and mix well with the chicken.
7. Continue to cook for another 2-3 minutes, stirring occasionally, to allow the flavors to combine.
8. Taste and adjust seasoning if needed.
9. Serve the chicken and ginger fried rice hot, garnished with green onions. Enjoy!
