Chicken parmigiana is a poultry dish consisting of breadcrumbs-coated chicken breasts that are topped with tomato sauce and cheese, then baked until the cheese melts and the chicken is properly cooked. Although it has an Italian-sounding name, chicken parmigiana is actually an American dish, derived from an Italian dish called melanzana alla parmigiana, or eggplant parmigiana.
Direction:
1. Preheat your oven to 375°F (190°C).
2. In a shallow bowl, beat the eggs and add a pinch of salt and black pepper.
3. In another shallow bowl, mix together the bread crumbs, parmesan cheese, a teaspoon of dried oregano, and a teaspoon of dried basil.
4. Take each chicken breast and dip it in the beaten eggs, making sure it is evenly coated.
5. Then, coat the chicken breast in the bread crumb mixture, pressing down lightly to ensure the crumbs stick.
6. Heat a large skillet over medium-high heat and add a tablespoon of olive oil.
7. Once the oil is hot, add the chicken breasts and cook for 2-3 minutes on each side, until golden brown.
8. Remove the chicken from the skillet and place them in a baking dish.
9. In the same skillet, heat the marinara sauce over medium heat. Add a teaspoon of garlic powder and a teaspoon of onion powder for extra flavor. Let the sauce simmer for a few minutes.
10. Pour the marinara sauce over the chicken breasts in the baking dish, making sure they are completely covered.
11. Sprinkle shredded mozzarella cheese on top of each chicken breast.
12. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
13. Remove from the oven and let it cool for a few minutes before serving.
14. Serve with your choice of sides, such as pasta or roasted vegetables, and enjoy your delicious and easy chicken Parmigiana!
