Chicken Sheet Pan Quesadilla
This Chicken Sheet Pan Quesadilla recipe is easy to make, full of great flavor, and the perfect fun party food to feed a crowd!
Direction:
1. Preheat your oven to 400°F (200°C).
2. Cut the chicken breasts into small, bite-sized pieces and place them in a bowl.
3. In a separate bowl, mix together the olive oil, chili powder, cumin, garlic powder, and onion powder.
4. Pour the mixture over the chicken and toss until the chicken is evenly coated.
5. Cut the bell pepper and red onion into thin slices.
6. On a large sheet pan, place two of the flour tortillas side by side.
7. Sprinkle half of the shredded cheese over each tortilla.
8. Spread the chicken, bell pepper, and red onion slices evenly over the cheese on both tortillas.
9. Sprinkle the remaining cheese on top of the chicken and vegetables.
10. Place the remaining two tortillas on top to create a quesadilla "sandwich."
11. Brush the top tortillas with olive oil and sprinkle with salt and pepper.
12. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and the tortillas are crispy.
13. Carefully remove the sheet pan from the oven and let the quesadilla cool for a few minutes.
