Choc Rum Sultana Cakes

A classic flavour combination that makes these no-fuss bite-sized sweet treats perfect for parties, afternoon teas, or for no reason at all.


- 1 cup all-purpose flour

- 1/2 cup sugar

- 1/4 cup cocoa powder

- 1/2 tsp baking powder

- 1/4 tsp salt

- 1/2 cup olive oil

- 2 eggs

- 1/4 cup dark rum

- 1/2 cup sultanas

- Olive oil for greasing

- Powdered sugar for dusting


1. Preheat your oven to 350 degrees Fahrenheit (180 degrees Celsius).

2. In a mixing bowl, combine the flour, sugar, cocoa powder, baking powder, and salt.

3. In a separate bowl, whisk together the olive oil, eggs, and dark rum until well combined.

4. Slowly pour the wet mixture into the dry mixture and stir until just combined.

5. Gently fold in the sultanas.

6. Grease a muffin tin or mini cake pan with olive oil.

7. Pour the cake batter into the greased pan, filling each cup about 3/4 full.

8. Bake the cakes for 15-20 minutes, or until a toothpick inserted into the center comes out clean.

9. Remove the cakes from the oven and let them cool for 5 minutes in the pan.

10. Carefully remove the cakes from the pan and let them cool completely on a wire rack.

11. Once cooled, dust the tops of the cakes with powdered sugar.
