Chocolate Blueberry Cakes

Moist chocolate sponge cake with little blueberry flavour explosions inside. For morning or afternoon tea, this a chocolate cake with a difference.


- 1 cup all-purpose flour

- 1/2 cup white sugar

- 1/4 cup cocoa powder

- 1 tsp baking powder

- 1/4 tsp baking soda

- 1/4 tsp salt

- 1/2 cup olive oil

- 1/2 cup milk

- 1 large egg

- 1 tsp vanilla extract

- 1/2 cup fresh blueberries

- Olive oil for greasing the pan

- Cinnamon and cocoa powder for dusting (optional)


1. Preheat your oven to 350°F (180°C) and grease a 9-inch cake pan with olive oil.

2. In a mixing bowl, combine the all-purpose flour, white sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.

3. In a separate bowl, whisk together the olive oil, milk, egg, and vanilla extract until well combined.

4. Pour the wet mixture into the dry mixture and stir until just combined. Be careful not to overmix as this can result in a tough cake.

5. Gently fold in the fresh blueberries into the batter.

6. Pour the batter into the prepared cake pan and spread evenly.

7. Bake the cake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

8. Let the cake cool in the pan for 10 minutes before removing it from the pan and placing it on a wire rack to cool completely.

9. Optional: Dust the top of the cake with a mixture of cinnamon and cocoa powder for added flavor and presentation.

10. Serve the chocolate blueberry cake as is, or top it with your favorite frosting or glaze for an extra indulgent treat.
