Christmas cookies

These festive vanilla cookies make a beautiful edible Christmas tree decoration. Or, you could pack them into boxes to give as end-of-term gifts for teachers and friends.

Ingredients:

- 1 cup all-purpose flour

- 1/2 cup granulated sugar

- 1/2 cup unsalted butter, softened

- 1 egg

- 1 tsp vanilla extract

- 1 tsp ground cinnamon

- 1/4 tsp ground nutmeg

- 1/4 tsp ground ginger

- Olive oil for greasing

Direction:

Instructions:

1. Preheat your oven to 350°F (180°C) and grease a baking sheet with olive oil.

2. In a mixing bowl, cream together the softened butter and sugar until well combined.

3. Add in the egg and vanilla extract, and mix until fully incorporated.

4. In a separate bowl, sift together the flour, cinnamon, nutmeg, and ginger.

5. Slowly add the dry ingredients to the wet mixture, mixing until a dough forms.

6. On a floured surface, roll out the dough to about 1/4 inch thickness.

7. Use cookie cutters or a knife to cut out desired shapes for your cookies.

8. Place the cookies on the greased baking sheet and bake for 10-12 minutes, or until the edges are lightly golden brown.

9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

10. Optional: You can decorate your cookies with a simple glaze made of powdered sugar and a little bit of water or milk. Add food coloring for a festive touch.

11. Once the glaze has set, your Christmas cookies are ready to be enjoyed! Serve with a cup of hot cocoa or eggnog for the perfect holiday treat. Enjoy!
