Cilantro Lime Shrimp Wraps

"Cilantro-lime" is a flavor profile we can never get enough of. Pretty much anything goes well with a kick from cumin, a little tang from lime juice, and fresh herby zing from cilantro, including these simple, low-carb lettuce wraps featuring quick-cooking shrimp.

Ingredients:

1 lb shrimp, peeled and deveined

1 tbsp olive oil

1 tsp chili powder

1 tsp garlic powder

Salt and pepper

4 large tortillas

1/4 cup diced red onion

1/4 cup diced bell pepper

1/4 cup diced avocado

1/4 cup chopped cilantro

1 lime, juiced

1/4 cup sour cream

1/4 cup salsa

Direction:

1. In a bowl, toss the shrimp with olive oil, chili powder, garlic powder, and a pinch of salt and pepper.

2. Heat a large skillet over medium-high heat and add the seasoned shrimp. Cook for about 2-3 minutes on each side, until shrimp turns pink and opaque.

3. While the shrimp is cooking, warm the tortillas in a separate skillet or in the microwave for about 20 seconds.

4. In a small bowl, mix together diced red onion, bell pepper, avocado, cilantro, and lime juice. This will be your salsa topping.

5. In another small bowl, mix together sour cream and salsa to make a creamy topping.

6. Assemble the wraps by placing a few shrimp in the center of each tortilla. Top with a scoop of the salsa mixture and a drizzle of the creamy topping.

7. Roll up the tortillas tightly, tucking in the sides as you go.

8. Optional: Heat a clean skillet over medium heat and lightly toast the wraps on each side for a minute or two, until they are slightly crisp.
