Leave out a few of these cinnamon-spiced cookies for Father Christmas on Christmas Eve. Perfect for the festive biscuit tin, you could add some raisins too
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup unsalted butter, softened
- 1 egg
- 1 tsp cinnamon
- 1/4 tsp salt
- Olive oil for greasing

1. Preheat your oven to 350°F (175°C). Grease a baking sheet with olive oil and set aside.
2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
3. Add in the egg and mix until well combined.
4. In a separate bowl, mix together the flour, cinnamon, and salt.
5. Gradually add the dry mixture into the wet mixture, stirring until a dough forms.
6. Roll the cookie dough into small balls, about 1 inch in diameter. Place them on the greased baking sheet.
7. Using a fork, gently press down on each cookie ball to flatten it slightly.
8. Bake the cookies for 12-15 minutes, or until the edges are lightly golden.
9. Once done, remove the cookies from the oven and let them cool on the baking sheet for 5 minutes.
10. Transfer the cookies to a wire rack to cool completely.
11. Optional: For an extra cinnamon kick, mix 1 tablespoon of sugar with 1/2 teaspoon of cinnamon in a small bowl. Roll the cooled cookies in the mixture to coat them.
