Ingredients:

- 1 cup all-purpose flour

- 1/2 cup unsalted butter, softened

- 1/2 cup white sugar

- 1/2 cup shredded coconut

- 1/4 cup olive oil

- 1 tsp vanilla extract

- 1/2 tsp baking powder

- 1/4 tsp salt

- 1/4 tsp ground cinnamon

Instructions:

1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

2. In a mixing bowl, cream together the butter and sugar until light and fluffy.

3. Add in the olive oil and vanilla extract, and mix until well combined.

4. In a separate bowl, sift together the flour, baking powder, salt, and ground cinnamon.

5. Gradually add the dry ingredients into the wet mixture, and mix until a dough forms.

6. Fold in the shredded coconut until evenly distributed throughout the dough.

7. Using a tablespoon or cookie scoop, scoop the dough and roll it into balls. Place them on the prepared baking sheet, leaving a few inches of space between each cookie.

8. Using a fork, gently press down on each cookie to flatten it slightly.

9. Bake the cookies for 10-12 minutes, or until the edges are lightly golden.

10. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes.

11. Transfer the cookies to a wire rack to cool completely before serving.
