Ingredients:
- 2 cups long-grain rice
- 4 cups water
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced tomatoes
- 1 bunch collard greens, chopped
- 1 teaspoon Cajun seasoning
- 1 teaspoon dried thyme
- Salt and pepper, to taste
Direction:
1. In a large pot, bring 4 cups of water to a boil. Add 2 cups of long-grain rice, cover, and let simmer for about 18 minutes, or until the rice is fully cooked.
2. In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add 1 diced onion and cook until translucent, about 3-4 minutes.
3. Add 2 cloves of minced garlic and 1 diced bell pepper to the pan and cook for an additional 2 minutes.
4. Stir in 1 can of diced tomatoes and let simmer for 5 minutes.
5. Add 1 bunch of chopped collard greens to the pan and cook until wilted, about 3-4 minutes.
6. Season the vegetable mixture with 1 teaspoon of Cajun seasoning, 1 teaspoon of dried thyme, and salt and pepper to taste.
7. Once the rice is fully cooked, add it to the pan with the vegetable mixture and stir until well combined.
8. Let the dirty rice cook for an additional 5 minutes, allowing the flavors to meld together.
9. Serve the Collard Green Creole Dirty Rice hot as a side dish or as a main dish with some protein added, such as blackened chicken or shrimp.
