Copycat Chicken Lettuce Wraps

In our attempt to copy the fan favorite from PF.Chang's, we flavored ground chicken with hoisin sauce (a fermented bean paste that gives the chicken the quintessential Chinese-American flavor), soy sauce, rice wine vinegar, sriracha, and sesame oil. Water chestnuts add a nice crunch here too.

Ingredients:

- 1 pound ground chicken

- 1 head of iceberg lettuce

- 1 onion, finely chopped

- 2 cloves of garlic, minced

- 1 tablespoon olive oil

- 1 teaspoon salt

- 1 teaspoon pepper

- 1 teaspoon dried basil

- 1 teaspoon dried oregano

- 1 teaspoon dried thyme

- 1/4 cup soy sauce

- 1/4 cup hoisin sauce

- 2 tablespoons rice vinegar

- 1/4 cup water

- 1/4 cup chopped peanuts (optional)

- 1/4 cup chopped cilantro (optional)

Direction:

1. In a small bowl, mix together the soy sauce, hoisin sauce, rice vinegar, and water. Set aside.

2. In a large skillet, heat the olive oil over medium-high heat. Add in the ground chicken and cook until browned, breaking it up into small pieces as it cooks.

3. Add in the chopped onion, minced garlic, salt, pepper, dried basil, dried oregano, and dried thyme to the skillet. Cook until the onions are translucent and the chicken is fully cooked.

4. Pour the soy sauce mixture into the skillet with the chicken. Stir until everything is well combined and the sauce has thickened slightly. Cook for an additional 2-3 minutes.

5. Turn off the heat and allow the chicken mixture to cool slightly.

6. Carefully remove the leaves of the iceberg lettuce, washing and drying them if necessary.

7. Spoon the chicken mixture onto each lettuce leaf, filling it about halfway. Top with chopped peanuts and cilantro, if desired.

8. Roll the lettuce leaves up like a burrito, tucking in the sides as you go. Serve immediately and enjoy your delicious Copycat Chicken Lettuce Wraps!
