Cranberry Apple Quinoa Salad

We don’t believe in boring salads at Delish, and crunchy apples and tart cranberries bring a lot of life to this one. The slightly sweet and lemony dressing is easy to make, and you’ll want to have extra on hand to pour it over everything.

Ingredients:

- 1 cup quinoa

- 1 ½ cups water

- 1 apple, diced

- ½ cup dried cranberries

- ¼ cup chopped almonds

- 2 tbsp olive oil

- 1 tsp salt

- 1 tsp black pepper

- 1 tsp dried thyme

- 1 tsp dried rosemary

Direction:

1. In a medium pot, bring 1 ½ cups of water to a boil. Add the quinoa and reduce heat to low. Cover and let simmer for 15 minutes.

 

2. While the quinoa is cooking, chop the apple and set aside.

 

3. In a small bowl, mix together the olive oil, salt, black pepper, dried thyme, and dried rosemary.

 

4. Once the quinoa is cooked, fluff it with a fork and transfer it to a large mixing bowl.

 

5. Pour the olive oil mixture over the quinoa and mix well, making sure all the grains are evenly coated.

 

6. Add in the diced apple, dried cranberries, and chopped almonds to the quinoa mixture. Stir until all ingredients are well combined.

 

7. Serve the cranberry apple quinoa salad at room temperature or chilled. If you prefer a warm salad, heat it up in the microwave or on the stove for a few minutes before serving.
