Creamy Tuscan Chicken

- 4 chicken breasts

- 2 tablespoons olive oil

- 1 teaspoon salt

- 1 teaspoon black pepper

- 1 teaspoon dried basil

- 1 teaspoon dried oregano

- 1 onion, diced

- 3 cloves garlic, minced

- 1 red bell pepper, diced

- 1 cup cherry tomatoes, halved

- 1 cup spinach

- 1/2 cup heavy cream

- 1/2 cup grated parmesan cheese


1. Season the chicken breasts with salt, pepper, dried basil and oregano on both sides.

2. Heat olive oil in a large skillet over medium-high heat.

3. Once the oil is hot, add the seasoned chicken breasts to the skillet and cook for 6-7 minutes on each side, or until fully cooked and golden brown. Remove the chicken from the skillet and set aside.

4. In the same skillet, add diced onion and minced garlic. Cook for 2-3 minutes until they are fragrant and slightly translucent.

5. Add diced red bell pepper and halved cherry tomatoes to the skillet. Cook for an additional 2-3 minutes until the vegetables are softened.

6. Add the spinach to the skillet and stir until it begins to wilt.

7. Pour in the heavy cream and stir to combine with the vegetables. Let it simmer for 2-3 minutes.

8. Stir in the grated parmesan cheese until it is fully melted and the sauce becomes creamy.

9. Return the chicken breasts to the skillet and coat them with the creamy sauce. Let it cook for an additional 2-3 minutes to allow the chicken to absorb the flavors.

10. Serve the creamy Tuscan chicken with your choice of pasta or rice. Enjoy!
