Dirty Rice

Dirty rice (or rice dressing as it’s referred to in the bayou) is a delicious Louisiana staple made mainly of rice, ground pork sausage, ground beef, the holy trinity of vegetables (onion, bell pepper, and celery), and sometimes offal such as liver. While many traditional recipes will include livers, we find it a bit harder to source (and they’re not always a crowd-pleaser), so livers are noticeably absent from this recipe. But that won't make this dish any less enjoyable. The combination of pork sausage and beef provides just enough fat that you won’t even need oil to brown the meats, either.

Ingredients:

- 1 cup raw white rice

- 1/2 cup ground beef

- 1/2 cup diced onion

- 1/4 cup diced bell pepper

- 2 cloves garlic, minced

- 1 tablespoon olive oil

- 1 teaspoon Cajun seasoning

- 1/2 teaspoon dried thyme

- 1/2 teaspoon dried oregano

- 1/4 teaspoon cayenne pepper

- Salt and pepper, to taste

- 1 1/2 cups chicken broth

Direction:

1. In a medium sized pot, heat up 1 tablespoon of olive oil over medium heat.

 

2. Add in the ground beef and cook until it is browned, breaking it up into small pieces as it cooks.

 

3. Once the beef is fully cooked, add in the diced onion, bell pepper, and minced garlic. Cook for 2-3 minutes until the vegetables are softened.

 

4. Add in the Cajun seasoning, dried thyme, dried oregano, cayenne pepper, and a pinch of salt and pepper. Stir to evenly coat the meat and vegetables with the seasonings.

 

5. Pour in the 1 cup of raw white rice and stir to combine with the meat and vegetables.

 

6. Slowly pour in the chicken broth and bring the mixture to a boil.

 

7. Once boiling, reduce the heat to low and cover the pot with a lid. Let it simmer for 18-20 minutes, until the rice is fully cooked and the liquid is absorbed.

 

8. Once the rice is cooked, fluff it with a fork and serve hot. You can add more salt and pepper to taste if needed.

 

9. Optional: For a more authentic dirty rice, you can also add in diced chicken livers or gizzards along with the ground beef. Cook them with the beef until they are fully cooked through. Enjoy your delicious homemade dirty rice!
