Egg Roll Bowls

If you're a fan of crispy savory egg rolls, then you might consider this unwrapped version your dream healthy dinner. Without the need to wrap or fry, this veggie-packed meal comes together in well under an hour.

Ingredients:

- 1 lb ground pork

- 1 onion, diced

- 2 cloves of garlic, minced

- 1 tablespoon olive oil

- 1/4 cup soy sauce

- 1 teaspoon ginger powder

- 1 teaspoon garlic powder

- 1 teaspoon onion powder

- 1/4 teaspoon red pepper flakes (optional)

- 4 cups shredded cabbage

- 1 cup shredded carrots

- 4 green onions, sliced

- Salt and pepper, to taste

Direction:

1. In a large pan, heat olive oil over medium-high heat. Add the ground pork and cook until browned, breaking it up into small pieces as it cooks.

 

2. Once the pork is fully cooked, add in the diced onion and minced garlic. Cook for an additional 2-3 minutes until the onion is softened.

 

3. In a small bowl, mix together the soy sauce, ginger powder, garlic powder, onion powder, and red pepper flakes (if using).

 

4. Pour the sauce over the pork mixture and stir to combine. Let it cook for another 2-3 minutes to allow the flavors to come together.

 

5. Add in the shredded cabbage and carrots to the pan, stirring to combine. Cook for 5-7 minutes, until the vegetables are slightly softened.

 

6. Season with salt and pepper to taste.

 

7. Once the cabbage and carrots are cooked, remove the pan from the heat. Stir in the sliced green onions.

 

8. Serve the egg roll bowl mixture in bowls or on plates, topped with additional green onions if desired. Enjoy your delicious and easy egg roll bowls!
