Rustle up some eggless choc chip cookies for a treat and add cocoa, if you like, to make chocolate versions. They're ideal if you follow an egg-free diet
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup butter, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1/4 tsp salt
- 2 tbsp olive oil
- 1 tsp baking powder
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ginger

1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
3. Add in the olive oil and vanilla extract, and mix until well combined.
4. In a separate bowl, mix together the flour, salt, baking powder, cinnamon, nutmeg, and ginger.
5. Slowly add the dry ingredients into the wet mixture, mixing until a dough forms. If the dough is too dry, add in a little more olive oil.
6. Take small portions of the dough and roll them into balls, placing them on the prepared baking sheet. Leave some space in between each cookie as they will spread while baking.
7. Gently press down on each cookie with a fork to flatten them slightly.
8. Bake the cookies for 12-15 minutes, or until the edges are lightly golden.
9. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes.
10. Enjoy your delicious eggless cookies with a glass of milk or a cup of tea! These cookies can be stored in an airtight container for up to a week. Enjoy!
