Fancy Frosted Choc-Vanilla Mini Layer Cakes

This recipe made 8 finished layer cakes in our Kmart Pie Maker.


- 1 cup all-purpose flour

- 1/2 cup sugar

- 1/4 cup cocoa powder

- 1/2 tsp baking powder

- 1/4 tsp baking soda

- 1/4 tsp salt

- 1/2 cup olive oil

- 1/2 cup milk

- 1 tsp vanilla extract

- 1 egg

- 1/4 cup water

- Olive oil cooking spray

- Fancy sprinkles or frosting of your choice


1. Preheat your oven to 350°F (175°C). Spray a mini cake pan or muffin tin with olive oil cooking spray and set aside.

2. In a mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.

3. In a separate bowl, whisk together the olive oil, milk, vanilla extract, egg, and water. Slowly pour the wet ingredients into the dry ingredients and stir until well combined.

4. Pour the batter into the prepared mini cake pan or muffin tin, filling each cavity about 3/4 full.

5. Bake for 12-15 minutes, or until a toothpick inserted into the center of a cake comes out clean.

6. Let the cakes cool in the pan for 5 minutes before carefully removing them and placing them on a wire rack to cool completely.

7. Once the cakes are cooled, you can either frost them with your favorite frosting or drizzle them with melted chocolate or add some fancy sprinkles on top.

8. Optional: To make the cakes even more decadent, you can top them with a dollop of whipped cream or a scoop of ice cream.
