What's in a name? Pop these in the oven, forget about them overnight, and you'll have crumbly cookies in the morning


- 2 egg whites

- 1/2 cup white sugar

- 1 teaspoon vanilla extract

- 1 cup semi-sweet chocolate chips

- 1/2 cup chopped nuts (optional)

- Olive oil (for greasing)

- Salt (for seasoning)

- Cinnamon (dried spice)



1. Preheat your oven to 350°F (180°C). Grease a baking sheet with olive oil and set aside.

2. In a mixing bowl, beat the egg whites until they form stiff peaks. This can take a few minutes, so be patient.

3. Gradually add in the sugar, 1 tablespoon at a time, while continuing to beat the egg whites. Once all the sugar has been added, beat for an additional minute until the mixture is glossy and holds its shape.

4. Gently fold in the vanilla extract, chocolate chips, and chopped nuts (if using) into the egg white mixture.

5. Using a spoon, drop small mounds of the mixture onto the greased baking sheet. Sprinkle a pinch of salt and cinnamon on top of each cookie for seasoning.

6. Place the baking sheet in the preheated oven and bake for 12-15 minutes, until the cookies are lightly golden on the edges.

7. Once done, turn off the oven and leave the cookies inside for an additional 10-15 minutes. This will allow the cookies to finish cooking and become crispy on the outside while remaining soft on the inside. Remember to turn off the oven, as these are "forgotten" cookies and should not be taken out immediately.

8. After 10-15 minutes, remove the cookies from the oven and let them cool on the baking sheet for a few minutes.

9. Transfer the cookies to a wire rack to cool completely before serving.
