Instructions:
1. In a mixing bowl, combine the ground lamb, chopped onion, minced garlic, grated ginger, and half of the olive oil. Mix well until all the ingredients are well combined.
2. In a separate bowl, mix together the cumin, coriander, turmeric, garam masala, salt, black pepper, and cayenne pepper (if using).
3. Add the spice mixture to the lamb mixture and mix well to evenly distribute the spices.
4. Using your hands, shape the lamb mixture into small, bite-sized balls (koftas).
5. In a large pan, heat the remaining olive oil over medium-high heat. Add the koftas to the pan and cook for 3-4 minutes on each side, until browned.
6. Remove the koftas from the pan and set aside.
7. In the same pan, add the diced tomatoes and cook for 2-3 minutes, until they start to soften.
8. Add the water to the pan and stir to combine with the tomatoes.
9. Add the koftas back to the pan, making sure they are submerged in the tomato mixture.
10. Let the curry simmer for 10-15 minutes, stirring occasionally, until the koftas are fully cooked and the sauce has thickened.
11. Taste and adjust seasoning if needed.
12. Serve the fragrant lamb kofta curry over rice or with naan bread. Optional: garnish with fresh cilantro before serving. Enjoy!
