French toast bacon butties

Sweet eggy bread and salty bacon are ideal partners in this indulgent bacon sarnie. Sprinkle with icing sugar and drizzle with your favourite syrup.

Ingredients:

- 6 slices of bread

- 6 slices of bacon

- 3 eggs

- 1/4 cup milk

- 1 tsp vanilla extract

- 1 tbsp olive oil

- Salt and pepper to taste

- 1 tsp dried thyme

- 1 tsp dried parsley

- 1 tsp dried oregano

- 6 slices of cheddar cheese

- Maple syrup (optional)

Direction:

1. In a shallow bowl, whisk together the eggs, milk, vanilla extract, and a pinch of salt and pepper.

2. Add in the dried thyme, parsley, and oregano to the egg mixture and mix well.

3. Heat a large skillet over medium heat and add the olive oil.

4. Dip each slice of bread into the egg mixture, making sure to coat both sides evenly.

5. Place the bread into the skillet and cook for 2-3 minutes on each side, or until golden brown.

6. Remove the bread from the skillet and set aside.

7. In the same skillet, cook the bacon until crispy, about 5 minutes.

8. Place the bacon on a paper towel to drain off any excess oil.

9. Assemble the French toast bacon butties by placing a slice of cheddar cheese on one slice of French toast, followed by 2-3 slices of bacon, and another slice of cheddar cheese.

10. Top with another slice of French toast to make a sandwich.

11. Repeat with the remaining ingredients to make a total of 3 sandwiches.

12. Place the sandwiches back into the skillet and cook for an additional 2-3 minutes on each side, or until the cheese is melted and the bread is crispy.

13. Serve the French toast bacon butties with a drizzle of maple syrup, if desired.
