Get the pie maker pumping to serve up these little French toast muffins next Sunday brunch.
Ingredients:
- 6 slices of bread
- 3 eggs
- 1/2 cup milk
- 1 tablespoon olive oil
- 1 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/4 cup shredded cheese
- 1/4 cup diced ham
- 1/4 cup diced bell peppers
- Olive oil cooking spray
Direction:
1. Preheat your pie maker or muffin tin in the oven to 375 degrees Fahrenheit.
2. In a mixing bowl, beat the eggs until they are smooth and well combined.
3. Add in the milk, olive oil, vanilla extract, cinnamon, nutmeg, and salt. Mix well.
4. Take a slice of bread and dip it into the egg mixture, making sure it is well coated on both sides.
5. Place the bread slice into the pie maker or muffin tin, shaping it to fit into the cups.
6. Repeat with the remaining bread slices, filling each cup with one slice of bread.
7. In a separate bowl, mix together the shredded cheese, diced ham, and diced bell peppers.
8. Spoon the mixture evenly into each cup, on top of the bread.
9. Place the pie maker or muffin tin in the oven and bake for 12-15 minutes, or until the bread is golden brown and the filling is heated through.
10. Once done, remove from the oven and let cool for a few minutes.
11. Carefully remove the French toast pie maker muffins from the cups and serve hot.
12. Optional: drizzle with maple syrup or sprinkle with powdered sugar for added sweetness.
