Fried Chicken

The most popular food of the Southern cuisine, fried chicken is the theme of many arguments where everyone involved seems to have a favorite, be it what their mothers used to make, a cult roadside eatery, or a bygone restaurant. However, it is universally agreed that the meat must be moist, succulent, and tender, coated with a crunchy, golden-brown crust.

Ingredients:

- 4 chicken drumsticks

- 1/2 cup all-purpose flour

- 1/4 tsp salt

- 1/4 tsp black pepper

- 1/4 tsp garlic powder

- 1/4 tsp paprika

- 2 tbsp olive oil

- 1 tsp dried thyme

- 1 tsp dried oregano

- Olive oil for frying

Direction:

1. In a shallow dish, mix together the all-purpose flour, salt, black pepper, garlic powder, and paprika.

2. Pat the chicken drumsticks dry with a paper towel and coat them with the flour mixture, shaking off any excess.

3. In a large frying pan, heat 2 tablespoons of olive oil over medium-high heat.

4. Once the oil is hot, carefully place the chicken drumsticks in the pan. Cook for about 6-8 minutes, flipping occasionally, until they are golden brown and crispy on all sides.

5. Lower the heat to medium and sprinkle the dried thyme and oregano over the chicken. Continue to cook for an additional 6-8 minutes, until the chicken is cooked through and reaches an internal temperature of 165°F.

6. Remove the chicken from the pan and place it on a plate lined with paper towels to absorb any excess oil.

7. Serve the fried chicken hot and enjoy! You can garnish it with additional dried herbs or a squeeze of lemon juice, if desired.
