fried shrimp and okra poboys

Fried Shrimp-and-Okra Po'Boys

Smashing and flattening the okra, instead of chopping it up and then frying it, makes them easier to fit onto the sandwich.

Ingredients:

- 1 pound of shrimp, peeled and deveined

- 1 cup of okra, sliced

- 1/2 cup of all-purpose flour

- 1/2 cup of cornmeal

- 1 teaspoon of Cajun seasoning

- 1/2 teaspoon of garlic powder

- 1/2 teaspoon of salt

- 1/4 teaspoon of black pepper

- 1/4 cup of olive oil

- 4 sandwich rolls

- Optional toppings: lettuce, tomato, pickles, mayo, hot sauce

Direction:

1. In a shallow dish, mix together the flour, cornmeal, Cajun seasoning, garlic powder, salt, and black pepper.

 

2. Heat the olive oil in a large skillet over medium-high heat.

 

3. Dip the shrimp in the flour mixture, making sure they are evenly coated.

 

4. Add the coated shrimp to the hot skillet, cooking for 3-4 minutes on each side until they are golden brown and crispy. Remove the shrimp from the skillet and set aside on a paper towel-lined plate to drain excess oil.

 

5. In the same skillet, add the sliced okra and cook for 5-7 minutes until tender and slightly crispy.

 

6. Cut the sandwich rolls in half and lightly toast them in the skillet or in a separate toaster.

 

7. To assemble the po'boys, spread a layer of mayo on one side of the sandwich roll. Add a few spoonfuls of the fried okra on top of the mayo. Then, add a layer of the fried shrimp on top of the okra. Repeat with the remaining rolls.

 

8. Serve the po'boys immediately with optional toppings such as lettuce, tomato, pickles, and hot sauce.
