Ginger Soy Chicken and Broccoli

Ingredients:

- 1 lb chicken breast, cut into bite-sized pieces

- 1 head of broccoli, cut into small florets

- 2 tablespoons olive oil

- 2 cloves of garlic, minced

- 1 inch ginger, peeled and minced

- 3 tablespoons soy sauce

- 1 tablespoon honey

- 1 teaspoon red pepper flakes (optional)

- Salt and pepper to taste

- 1 teaspoon dried basil

- 1 teaspoon dried oregano

- 1 teaspoon dried thyme

Direction:

1. In a small bowl, mix together the minced garlic, minced ginger, soy sauce, honey, red pepper flakes (if using), and dried herbs. Set aside.

2. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.

3. Add the chicken pieces to the skillet and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-6 minutes.

4. Remove the chicken from the skillet and set aside.

5. In the same skillet, add another tablespoon of olive oil and the broccoli florets. Season with salt and pepper and cook for 2-3 minutes, until the broccoli is slightly tender.

6. Return the chicken to the skillet with the broccoli and pour in the soy sauce mixture. Stir everything together and cook for an additional 2-3 minutes until the sauce has thickened and the chicken and broccoli are fully coated.

7. Serve the Ginger Soy Chicken and Broccoli Stir Fry over rice or noodles, if desired. Enjoy!
